At Tel-Hai University of Kiryat Shmona & the Galilee, Dr. Benjamin heads the Analytical-Sensory Laboratory, equipped with advanced instruments including electronic \u201cnose\u201d and \u201ctongue\u201d systems, a texture analyzer, and a rheometer. His current research focuses on extracting plant-based proteins (from sources such as quinoa, moringa, and edible insects) and upcycling food waste (for example, apple residues) for applications in functional foods. He was recently appointed head of the Physical-Chemical Food Laboratory, supported by the Glaser Foundation Fellowship.<\/p>\n
